Freezer Cooking With Chicken Breast

Whenever chicken breast goes on sale at my local grocery stores, I stock up and when I get home, I start cooking. Sure, you could just throw the chicken breast in the freezer as is, but it’s a lot more fun and makes cooking throughout the week a lot easier if you spend a little time preparing the chicken before you throw it in the freezer.That’s the beauty of freezer cooking. You spend a little time now to make cooking dinner on a busy weeknight as simple as thaw, heat and serve.

Season Or Marinate It

Start by seasoning or marinating most of your chicken. I usually take about 2/3 of the chicken breast I bought, throw it in a large bowl and toss it in light italian dressing. It’s a yummy and very versatile marinate. Take some of the marinated chicken and put it into freezer bags with a bit of the marinade. If you are planning on grilling dinner, take the chicken out of the freezer and move it to the fridge early that morning or the night before. If you forget to take the frozen meat out in time, toss it in a bowl or sink filled with cool water. It should thaw out in about an hour or so.

Precooking The Chicken

I suggest you also go ahead and cook some of the chicken right away. I like to bake it in the marinate at 400 F for about 45 minutes or until the chicken is cooked through. We usually have some of the baked chicken for dinner, the rest is frozen to be reheated another night or to be used in different meals…

Variations

Take the rest of the chicken that you didn’t eat that night and allow it to cool completely. I thinkly slice some of it to be used in chicken salad later. If you are planning on serving the baked chicken over a bed of salald or on a sandwich later that week, store it in the fridge, otherwise slice and freeze it. To serve, just thaw and then use as you would any grilled chicken strips.

You can also freeze the entire chicken breasts and then rehead in the microwave or the oven and serve it with your favorite side dishes. For best results allow the meat to thaw completely, then microwave for a few minutes or reheat in a 350 F oven until the chicken is heated through.

Next I add pently of barbecue sauce and a little water and let the mixture simmer until the chicken is all the way cooked through. After it’s completely cooled, I put it into freezer bags or plastic containers with lids that can be stored in the freezer.
